Enzymes: Enzymes are molecules that are vital to breaking down food and nutritional particles, such as proteins, starch and sugars, into smaller particles and molecules that can be absorbed and used by the body. Enzymes are found in many parts of the body, including the saliva in the mouth and in the gastric juices of the stomach and in the small intestine. Conditions that afflict enzymes include enzyme deficiencies and genetic enzyme defects.
